Toppings for Caribbean Pork Tacos

I am going to make caribbean pork tacos at the upcoming Big Green Eggs in the Hamfest in Birmingham. I am going to marinate a bunch of pork tenderloins in homemade Mojo and season in a few different caribbean rubs. Does anyone have any ideas for toppings, such as mango salsa and whatnot?

this might work good with it, it has some diced avocados, a sauce made from sour cream and a couple canned adobo peppers blended in a food processor with a touch of honey, culantro, not cilantro, and a cabbage slaw

Pretty much 2 to 3 very ripe mangoes, Small handful of Cilantro, 1/4 to 1/2 red onion (to taste) juice of half a lime......Avocado and Jalapena optional. I like a simple Salsa so it compliments and doesn't compete with the rub spices.Dearborn MI
