    @Philly35‌ gotcha! So bout the same sort of IT of a brisky and like buttuh. Although I did NOT wrap this at all. I had a chef's treat of some brats (early on smoked @225℉ for like 3hrs and gave one to my Son too) with some brown spicy mustard. OBW Butt is now at IT of 189℉

    I pull at 205, but everyone's different. I agree that using the probe trick like brisket works well too. Just make sure your probe isn't against the bone as it will give you a false high.

  • Last butts I did were low n slow for two 6 pounders. I cooked em at 250 for 10 hrs(no peaking!). They stalled at 170. I bumped em to 275-300 and they came up to temp. I pulled em at 200, wrapped in heavy foil and towels for three hrs and put them in a dry cooler to rest before pulling. They were ridiculously good.

    Pulled at 202℉ like buttuh! Here y'all go. Not bad for my first go at it. Definitely has some bite. The bark turned out freaking awesome! Really liked Mickey's Coffee Rub on this butt. Well time to eat. Thanks for hanging for the long haul. 13.5 hrs later supper is served :-)imageimageimageimageimage

    @DMW‌...Nice! :-) Looks like one hellava party. Better to clean up now I spect. We just finished putting leftovers in containers for refrigerator. Now I'm enjoying one more cold one whilst I wait just long enough to finish cooling off the LBGE so I can put the cover on.

    Turbo butt I did yesterday. Ended up FTC'ing for 4 hrs, as it finished a little early. They saw that softens the bark, but it was still great.

    I get the low and slow, but when turbo turns out this great, its hard to justify the extra time.

    How did you like the Mesquite flavor on a L&S? I find that and Hickory too bitter for myself and many of my guests. I don't keep either around anymore, Ken

    Xiphoid, on another site I heard the complaint being that when you pull the fat hasn't rendered from inside. Flavor is good but a lot more internal fat chunks. Have you found that as well? Ken

    There were some internal fat chunks. It was a 9lb-er. Probably 2 shot glasses worth. Is that a lot? It's so tender, the fat just pulls away and I've never found much fat there. Definitely not enough to be discouraged.

    Like I said, it was the only thing I heard bad about Turbo vs L&S. I don't usually see any fat on my all day smokes. That and maybe a little difference in bark. I'm trying turbo ribs for the first time today. Resting in foil  and ramping up the heat for some pizzas.

    @NPHuskerFL do those bear paws work any better that 2 forks? I hate a tool that only does one thing, but if infinitely faster than 2 forks may be worth it?

    @xiphoid007‌ they are handy to pull the food off the grill with whether it be a butt, brisky etc. They work excellent to shred with.

    @NPHuskerFL what brand are those? I've seen many advertised. Some seem very cheap, those seem very nice. Metal? Plastic? Dishwasher safe?

    Yep they're dishwasher safe, very heavy duty, sharp a hell, resist heat and SWMBO bought them on Amazon. They are WAY faster than forks. This nearly 8# butt took minutes to pull and the thick crust was nothing to the claws. I also used them to pull it off the egg. I like em

    Who out there is the Butt Master? Ok heehee that sounded funny but, seriously who is? I've been summoned to make a L&S this coming weekend and they want a Boston Butt. I will however have to be time conscious so about how long (average only) rolling 225℉-235℉ on say a 8-10#? Is 1.5hrs per# a good average guideline? Ya I'm hooked :-)
