Even got a couple to go. Re-heated them on the Egg
The lunch was just a bonus.

You got the good one. Next time I'm cutting them all open to see the best marbling before I pick mine. Dem quails is good too. Notice the starling population seems to be dropping.

I would like to get up to brampton next week . I am putting the finishing touches on my eggfest cook and should most likely need to go to that store next to the restaurant .

i did them about 35 days , it was my dry run and worked out so well . I have 2 more pieces in the fridge that i will wait the full 40

Yeah this piece I wet aged about 1 month .
The other 2 i have in the fridge went 6 weeks . I wanted to get a test run in before i threw in all my pieces to the fridge .
also me and the wife cant stop eating those candied jalapenos.
