Saturday Fish & Mothers Day Cook

Inspired by @Mickey fish from yesterday I decided to try something I've wanted to do for a while... Grilling a whole fish!
So I picked up 3 whole Branzino that have been gutted and cleaned. I am going to stuff them with lemon and herbs and grill them direct at about 400 till the IT is 145. The fish guy assured me that it would be easy to basically remove the head and bones all at once. I have my doubts about that... But I did get a pack of Hebrew Nationals just in case
Going to make a mango and cucumber salad to go with it...
For mother's day... Going with some Watermelon salsa as an app, followed by a couple of London Broils and a batch of the company potatoes...

Smelled great... Wife and daughter gave it A+ for effort. Wasn't impressed at all by the taste, though the bones and all came out easy.

Always good to have a back up plan. The fish look pretty good to me, but the kids would probably prefer the dogs.

The fish wasn't that good... texture wasn't there and it had no flavor. On the other hand, the dogs were outta sight

Looks good hap, sorry it didn't taste good.
We have white and speckled trout in the gulf around NOLA. There's really no commercial market for white because the meat turns mushy after a day or two and it doesn't freeze well.
What can ruin fish most of the time is age - the enzymes similar to what make beef tender with time really work fast in fish, depends on the species. And fish flesh, depending on several factors, esp fat content, turns to goo if over cooked. Salmon, for example, can remain palatable even after grossly overcooking. Not saying you did that, but just what I've experienced myself and from cooking at a steak and seafood joint when I was in school.
