Just a tiny brisket...

This weekend, I smoked the largest brisket that I have ever done: 18 LBS!! This thing was massive. I went Texas style using Meat Church's Holy Cow rub. I cooked at 250F using oak & Hickory. I was planning on approx 18 hours, but it was done in 10-1/2 hours. It was tender, juicy & delicious! Love me some brisket!

Fine looking brisket! Where did you purchase that beast?Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

That was my exact thought. I had planned for approx 18 hours. I put it on at 11:00pm Friday night. I didnt want to run my Maverick all night just because I didn't want to waste the batteries. I went to set up the Maverick at 9:30am Saturday morning and my probe just about feel through it! So I broke our my Thermapen and probed it all over and it was D-O-N-E done! IT ended up at 205. I was shocked at the time frame. The lesson learned is that every cook is different.alynd said:That sounds really really fast for a cooking time on a brisket that big at that temp. -
I agree. I did a 12 LB. packer on Saturday and it took 16 hours at 250* grate to reach 210* internal. There was still some resistance at 200-205* with the Thermapen so I let it go a little longer.
