I am cooking brisket overnight . I have a digi q and am thinking of cooking at 200 until morning
Is that to low ??

Yep, too low. Lowest I would start at is 225* grid temp, then adjust as needed in the morning based on current status.They/Them

Pantry....I am with you on the low and slow.....I always start out at 215 and after about 12 hours, bump the temp up.......I never sauce the meat and most people eat it without adding any sauce

Start low, bump or steady isn't going to make any difference.
