Large packer brisket question

I was able to pick up a whole packer brisket at Publix last week.  Apparently they're only sold during Passover season.  It is almost 17 pounds and well over 20inches long.  So long in fact that it won't fit in my Large BGE.  What do y'all suggest I do in terms of trimming it down?  Should I simply trim off some of the flat?  Or should I cut it in half--I could put the point section on top and the flat section underneath?  If I cut in half, how would that impact estimated cooking times?

Suggestions?

    Drape it over a V-rack initially. As it cooks it will shrink up and you'll be able to pull the V-Rack partway through the cook.

    Brother don't cut it in half. Improvise. Roll a couple of bricks or what ever in some tin foil and set them on the grid. Droop your brisket over the bricks , this will raise the center of your brisket up effectivly shortning it so it will fit. I have done this many times with great results. After a few hours of cooking you can remove the bricks as the brisket will have shrank. Trust me my friend I have done larger briskest on my large egg than the one you are cooking with no problem at all. As always I hope this helps my friend.

  • Just make sure that if there is any part of the brisket overhanging your platesetter that you put foil under it to prevent overcooking. Once the brisket has shrunken down, and you've removed your v-rack or bricks, check again for overhang. If there is none then you can remove the foil, otherwise, leave it in place.
