I am an amateur on tails, but these turned out well. Cut the little flipper things off, use scissors to split the shell. Marinated in a chipolte lime mixture. Finish the split to make quarters. Rub the major exposed face with EVOO and put on the grid at 400 raised direct (but a bit off to the side) for 5 minutes or so. Shell side down done over the heat for another 5.
