chicken wrapped in bacon.
I thawed sine chicken breasts and didn't want just a spice rub, so I spice rubbed some breasts... and wrapped then in bacon. I cooked indirect at 400 until IT of 160. They came out great, but next time I'll freeze the chicken for approx 30 minutes then wrap. The hope is that will allow the bacon to crisp up a bit more by delaying the chicken cook.

I love rubbing breasts. You can also cook them HOT for 5 minutes or so to crisp the bacon.
