APL brisket flat

This brisket flat is a little bigger than the one called for in Adam Perry Lang recipe but it won't go to waste. Few observations so far. The pieces of garlic stuffed into the meat is something I've never done before. Can't wait to see how that works. The paste recipe smells awesome. imageimageimage

    Looks good.  Is this from Serious Q?  So far I have only made the BBQ sauce, which took all day :P


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    @SmokeyPitt it is. It calls for a higher temp but I'm going to run 275 for a while. I'm in no hurry

    Interested in how it turns out. The recipe sounds great to me until the foiling sauce; I'm just not fond of sweet barbecue.

    When you open that up, we'd like to see pics of the finished product on a plate.  Looks so pretty as it is here.

    Picked this little beauty at SAMs. They have some semi prepared food ready for the oven that I haven't seen before. Asparagus, bacon, Parmesan cheese, some sort of herb butter and salt and pepper ready to go. Smells awesomeimage

    Just the right texture and the garlic infusion and APL rub is killer. It's got some heat to it. Sorry for the crappy picimage
