Four Poblanos and two Jalepenos, sliced into boats and hollowed out and some cooking spray on their backsides.

Spread a layer of softened cream cheese on the inside.

Beat some eggs and pour in, add some chopped herbs, S &P, and sprinkle some grated cheddar on top.

Top with a fitted slice of bacon and throw on the Egg indirect at 300F.

On the top rack throw on some Mahi filets with Bone Suckin' rub or whatever you like.

Pull off the Egg when the bacon is firm and the Mahi at 140F IT.

The Poblanos were good, the egg inside firmed up nice, the cheese and herbs just right, and the bacon firm.

How did you keep the peppers from rolling over? I want that.
Not to get technical, but according to chemistry alcohol is a solution...

You can minimize the peppers tendency to roll over by the way you cut it lengthwise. That and 'nesting it' on the grill by aligning it with the grill grate rods. The bigger problem is the uncooked egg, which is easy to spill during handling or due to 'tilt' if the pepper was really 'pointed'. And the better news is that it doesn't have to be breakfast to eat eggs in peppers!
