shoulder on egg question

I've cooked several shoulders but I'm cooking this one all night and having it for lunch tomorrow. after taking it off in the morning how long can it stay wrapped up saftly.I'm taking it to work so I can't leave on egg. thanks for any replays.

    Get it to temp, wrap in a couple layers of heavy duty foil and stick it in a cooler wrapped in towels which take up all the extra space.  You can preheat the cooler by pouring in hot water, then empty and dry.  You'll be good for at least 6 hours.

    +1 on what the "sicky" Tj said - make sure the cooler is just big enough to hold the meat, That is don't try and hold a 5 pound butt in a 45 quart cooler.

    Thanks,l put in cooled in foil and towel for 4 hrs before we eat and it was great. The bone pulled right out.
  • Just an fyi...When I do this I don't just use one towel...I use 5 or 6 kitchen size towels...I always have good luck

    I stopped using the towels all together.  Preheat the cooler with some boiling water (if you have to go a long, long time) and wrap with foil to keep all the juices together with the meat.  The towels just get disgusting.  I would not do away with the towel(s) unless you have an air-tight (gasket) cooler.  You lose heat through air leaks.  It's really no different than your refrigerator or a house.
