SMOKE & Temperature

hey everyone. quick question... so after lighting my egg i allow it to reach the temperature i want for smoking then put my wood on and let the smoke begin. the problem i am having is that once i put my wood on my temp goes way down, like around 100. and it takes a very long time for it to reach 225 or so. i actually have to open all the vents to get it to rise, even though my vents were set for my smoking temp. does anyone know why this is? it just seems weird that my temp gets set and once the wood goes on and the smoke begins it drops significantly and take 45 min or more to get back up especially since the top is only open for less than a minute. thoughts? thanks!

Mix the smoke wood in with your lump, chips or chunks - does not matter.Light the lump away from any smoke wood and bring it up to desired temp. For low and slows you can't successfully add smoke wood to the top of a burning lump pile.

Once you come up to your temp, how long are you waiting until you open your lid to add your wood and food? You may not be letting the ceramic actually warm up, just letting the air around thermometer come to temp. If you are not waiting (10-20 min) you are just letting the hot air out that the thermometer was reading, plus putting cold food in there will drop the temp even more.
