Friday's Butt and Beyond
Had a pork butt sitting in my fridge for just such an occasion. Dinner may or may not be leftover London Broil, or bourbon...
Anyway, simply just to fire up the egg tonight, I'm going old school on an almost 9# pork butt. Seasoned with just sea salt, pepper, and garlic salt. Going with several chunks of oak for smoke. Egg is stabilized at 250 dome, no maverick tonight just gonna let her run till she's done. Cleaned out the ash with the ash tool, and loaded it up with Rockwood.
My deck smells awesome and I'm sure the neighbors hate me a little. How much would they hate me if they knew that this cook was simply for future meals LOL

I'm still learning but your combo of rub and wood chunks for the pork shoulder is something I wouldn't have considered. Sounds interesting. I've got oak going right now for my 2nd brisket with some homebrew smoked pale ale to pass the time.XL egg owner, home brewer, jogger, coffee roaster, gamer

Smoke #2... And my wife just ordered cheesesteaks from Sams... I love that girl! Sam's makes the best cheesesteaks around short of going into Philly. And what's better? They're only about 300' feet from my front door!

5AM... Update.
Up because my allergies are acting up and my nose is running like a faucet, not because I meant to check on the egg. Figured while I was up... I walked out to find my egg happily sitting at 250 just like I left it hours ago
No maverick...
Every time I'm tempted to drop the $$$ for a controller of some type, I do a cook like this and realize that I probably really don't need one.

Just cooked it till it felt done. That was the first time I had opened the egg since last night and I just popped the thermapen in to get a feel, felt like butter
Picked up some veggies, a few pizza crusts, cheeses, and sauces to make pizzas later most likely, going to use the pulled pork for that...
Also picked up 2lbs of baby octopus that I am going to cook & char grill for one of the pizzas
Tomorrow I have 3 flanken cut beef short ribs that I want to try...
Beautiful weather that I intend to spend as much time out in as possible, unfortunately my partner in crime is down with a stomach bug & fever, thing she picked it up from Elise earlier this week. Just hoping I don't get it

You will. Sorry buddy. It's been going around for weeks. If swapped spit in the 2-3 days prior to SWMBO getting it, the virus is on board and ready to roll unless you have antibodies. It was a blast 3 weeks ago for my family. Quite literally.hapster said:Thanks guys

Lots of lump leftover from the cook last night using Rockwood.
Pulled the butt and used some Devils Spit from Famous Dave along with some Dijon mustard. This will be used later for pizza...
Time to fire up a stick, pour one, and enjoy the sunshine and some spring training baseball
