Venison Smotherd Steak

A few weeks ago someone on here asked the question of what to do with some venison they had. Got me thinking about my childhood and I remember my Granny (yes I'm from East Texas) making smothered steak and me devouring it. I remember her breaking out the gallon tub of crisco and frying up the steaks and making a gravy out of the grease, chopping up onions and throwing everything back in and cooking it in the oven for a few hours. Have some mashed potatoes and black eyed peas and I was in heaven.

Jump 30 years later and I had some venison in the freezer so I went the same route, minus the tub of crisco, onions and the oven. I went the route of letting the meat soak in buttermilk for a few hours, dredged in flour and fried them up in peanut oil. I admit I had a few little nibbles before of the steak and I thought I had died and gone to heaven. I had some left over gravy from the short ribs I made last week so I used that as well as made some more gravy with the left over grease, flour and beef broth.

Went 325 indirect legs up for 2 hours, By far not the healthiest meal but my Granny would of been proud. Now I need to go walk about 5 miles.

    Oh damn!! That looks tasty. My wife would love that with all the mushrooms in it. What am I saying? I would love that. Did you kinda just add stuff or you got a recipe written down for it?

    @griffin What I did was I used the left over gravy from my short ribs that I made last week also. But after I chicken fried the steak about 3-4 min per side I pulled the steaks out of the grease and whisked in the left over flour I had with a can of beef broth as well, Then mixed my leftover gravy. My granny used to add a s..t load of onions to hers but I don't care for onions so I went the mushroom route. You could add both and I imagine you would be in heaven. Make sure you make a big ole pile of mashed potatoes also.

  • You had me at venison then lost me with the shrooms! haha Although I do not like mushrooms it looks like a good cook. I have done fried venison steaks before with an aioli sauce and it was out of this world. Glad to see other cooking up such a delicious meat.
