Price of SHORT RIBS?

OK, I must be missing something.  After reading some of the posts on Short Ribs I headed down to my local full service butcher to get some.  I did not see any short ribs so I asked the butcher.  He said he doesn't leave them out because they are too expensive and thus no longer in as high demand as in the past.  I asked how much?  $10.99 a pound.  Ribeye was $9.99 and so was Prime Rib!  I said weren't short ribs at one point an inexpensive cut of meat.  He said yes but they have been going out of sight lately.  What up with that?  Most of my local grocery stores don't even put them on the shelves either.  Is it just CT?

    Are you talking about Chuck Short ribs? If so, all the markets carry them around here for about $6.99/pound.  I have recently discovered (through many discussions here) Plate Short RIbs which are from a different part of the cow.  Most markets do not carry them, but I got some at Restaurant Depot for $5.99/pound.

    If you have a good butcher or cooperative meat manager, they might be able to order the Plate Ribs which are known as IMPS 123A.  Chuck SHort Ribs are IMPS 130.

    I'm just curious...what is "CT" in your last question?  

    In my area at grocery stores I only see the more "standard" cut of short ribs (the smaller ones) like these:

    Those are pretty reasonable- I want to say about $5 lb.  I have seen chuck short ribs at BJ's wholesale and they are $5-$6 a lb.  It is still a bit pricey because the bones are huge.   I am going on the hunt for plate short ribs like @Shiff pointed out, but haven't found them or priced them yet. .

    Connecticut.. things tend to be more expensive here than in the middle of the country.  
    I'm just curious...what is "CT" in your last question?

    I paid $4.20# for Beef Chuck Ribs. Your butcher is robbing folks!

    Another possibility is to buy a whole rib eye and cut your own. That way, you will pay less and be able to control the amount of meat that's on them. You can cut up the rest for ribeye roasts and ribeye steaks. That's what I did last time and I got the whole ribeye for 5.99 per pound (choice cut).

    $5.99 or so in Seattle. Not cheap, that's like 1.5 short ribs.

    It's about $8/lb at Wegmans in my area; just under for bone in and just over for boneless.

    The whole ribeye does not have short ribs - they are back ribs.  They are much better than chuck short ribs, but the original poster was asking about short ribs.

    I know it's confusing but it's really not.

    Beef Chuck Ribs and Plate Short Ribs.

    Beef chuck ribs are fabulous too, just not as good as plate short ribs because the fat is less consistent. I would have a beef chuck rib over a beef back rib in a heart beat!

    I used to think that Beef Back ribs were  the greatest thing until I cooked my first Plate RIbs a few days ago.  When we ate at Blacks BBQ in Lockhart Texas a few years ago I had beef ribs that I thought were outstanding.  I thought they were back ribs but couldn't understand how he had cut them since they were so meaty.  I recently found out that they are Plate RIbs.

    I'll bite since you guys have garnered my interest in this type of rib.

    Does anyone in Metro Atlanta (DeKalb/Fulton/Cobb Counties) know of a butcher or other vendor that may carry this type of rib?

    So far, I've called Sawicki's in Decatur and Oak Grove Market in Decatur. Neither one of them carry it or have access to it via special order.

    Publix and Kroger's meat representatives did not have a clue as to what I was describing, even though I gave them the NAMP/IMPS number (123/123A) for reference purposes.

  • Your best price is going to be in an Oriental market. They have them by the ton. Usually about 2.99 here

    I just went to BJ's and found a cryovac package of Beef Chuck Short Ribs.  It was 4 pieces of meat and the entire thing weighed about 9 lbs. @ $3.99 a pound.  These can NOT be the same thing my butcher was selling for $10.99 a pound.  I will be giving the BJ's chuck ribs a try soon and will report back....with pics!!

    I just picked up one cryovac pack of beef chuck ribs for $3.97#. 2 slabs weighing about about 9.8lbs. They're both on the egg now!

    Great looking cook. Has anyone in the upstate of South Carolina found anything that looks remotely this good? I get the same response that nolan8v gets everywhere I have checked. They don't seem to know what I am talking about.
