Mexican Rice Bowl Ideas

We are thinking of trying to replicate some kind of Mexican rice bowl. We had something like you get at Chipotle or Qudoba. We are going to make some Cilantro lime rice with some black beans, salsa, cheese, and who know what else.

Im going to cook the chicken on the egg and need some help trying to get together a good Mexican style chicken rub.

    I used this recipe to make my fajita seasoning (adjust as you'd like). I would recommend a "less-is-more" approach when putting this on the chicken. You won't need much!

    Its nice to see recipes that call for ingredients that most people have in there cabinets. 
     
    I was thinking about using the rice cooker. Im not sure if I should mix in the cilantro before the rice is cooked or mix it in after. 

    This is a first time try for us so I'm sure there will be some experimenting.

    Don't know about the restaurants you mentioned, but this is a great meal.


    Here is another idea.

    Chicken, Breasts, Rice, Mexican

    INGREDIENTS:
    8 oz Tomato sauce
    1 tsp Ground cumin
    1/4 tsp Onion powder
    1/8 tsp Garlic powder
    1/4 tsp Cocoa
    1/8 tsp Salt
    1 Tbs Chili powder
    2 Chicken breasts; boneless -- cooked, chopped
    1 cup Rice
    1 cup Cheddar cheese -- shredded
    Sour cream
    Picante sauce
    Tomato -- chopped (opt)

    PROCEDURE:

    1. Prepare sauce in small saucepan by mixing 2/3 can tomato sauce and spices. Add chopped, cooked chicken. Put sauce on low heat and stir occasionally. Prepare rice. When rice is done, and remaining 1/3 can tomato sauce to rice and stir. To serve, place rice on plates, topped with chicken-sauce and then shredded cheese. Serve with sour cream, picante sauce, and chopped tomato if desired.

  • Cilantro and lime need to go in after cooking.  Both need that fresh blast.  Cooked, not so good.

    I also add the lime zest to the mix as well as juice, I really like how it brightens the flavor. And yes add it after the rice is cooked.
