Mexican Rice Bowl Ideas

We are thinking of trying to replicate some kind of Mexican rice bowl. We had something like you get at Chipotle or Qudoba. We are going to make some Cilantro lime rice with some black beans, salsa, cheese, and who know what else.
Im going to cook the chicken on the egg and need some help trying to get together a good Mexican style chicken rub.
Thanks for the ideas everyone.

I used this recipe to make my fajita seasoning (adjust as you'd like). I would recommend a "less-is-more" approach when putting this on the chicken. You won't need much!Let us know how it turns out. How are you making the rice?Large - Mini - Blackstone 17", 28", 36"

How are you making the rice? Its nice to see recipes that call for ingredients that most people have in there cabinets.I was thinking about using the rice cooker. Im not sure if I should mix in the cilantro before the rice is cooked or mix it in after. This is a first time try for us so I'm sure there will be some experimenting.Jeff from Winston-Salem, NC - LBGE, MiniMax, Blackstone -

Cilantro and lime need to go in after cooking. Both need that fresh blast. Cooked, not so good.

I also add the lime zest to the mix as well as juice, I really like how it brightens the flavor. And yes add it after the rice is cooked.DavidBBQ since 2010 - Oh my, what I was missing.
