Ok- the IT is at 196.I'm about to take it off and do the FTC for 4-5 hrs.Should I keep the Maverick ET732 thermometer in the meat while in the cooler?

It doesn't really matter. I have but I usually take it out. It will still be piping hot in 4-5 hours. Hope to see pics!

I just FTC'd it. One thing I want to ask- I had a little difficulty taking it off the grate. It stuck and some of the juices came out.I quickly got it into the pan and wrapped it up.Is that OK?

Yeah no worries. It's always better to not lose those juices but it isn't going to hurt you any.

I'm very sorry that I did not see your question for me back on Jan 11th. Just seeing it today.
The thick, white billowy smoke I refer to is from the smoking wood, not the charcoal. Best to wait till it turns to a clear-blue translucent smoke for better flavor.

Cooking too slow it a recipe for losing your fire. Pork butts can easily be cooked at 300 degrees with no negative impact on the quality. It is the easiest cook to do on the egg in my opinion.
