I never can remember to take pics of cooks I do. I was planing on taking some pics of the loin as I prepped it. I cut it thin and sautéed some spinach, artichoke hearts, and garlic. I spread that out and put some mozzarella cheese in and rolled it up then rubbed with some Dizzy Pig Pineapple Head rub. Egged it for 1hr 15 min at 350. Here are the results.

It turned out pretty good. I feel like the stuffing needed something to make it a little saltier or something it was a little bland.Jeff from Winston-Salem, NC - LBGE, MiniMax, Blackstone

Yes I did use butchers twine to tie it up. I don't think it would have stayed together without it. It was pretty messy. LolJeff from Winston-Salem, NC - LBGE, MiniMax, Blackstone -
That looks awesome. I really like the first pic with all the stuff oozing out. =P~Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
