Here's one from that sinner of a woman Paula Dean, surprisingly not a terrible recipe as far as adding additional fats such as dredging in buttermilk, etc. I've done this a couple of times and was really good.I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

Soak in buttermilk, dredge in flour, salt and pepper. I add just a little rub. Fry as low as possible. Cover for a while, turn as needed then uncovered till done and crisp.Green egg, dead animal and alcohol. The "Boro".. TN

I'd say between @henapple and the recipe I posted, those are probably the simplest way to fry chicken, it's really not that hard, just different as most at home cooks don't use that much oil very often.I raise my kids, cook and golf. You may get as many ideas as there is southerners....I either do it like @henapple says or.... Mix I-2 cups milk with one raw egg ....add salt, pepper and paprika into the flour....dip chicken in the milk mixture and then into flour mix then back into milk and then back into the flour....have your. Oil in the skillet at about 350.... Fry until golden brown on both sides.

This guy did just what @henapple said in the post a few above. This was a few years ago at the Texas Fest in Austin (don't remember his name). This was the very best chicken with Babes in Dallas a close second.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Best I've found and makes an amazing crust and hey, isn't that what it's all about? Not an easy undertaking by any means.
