Hope y'all enjoyed the holidays.
Got a 14 lbs brisket on the egg. It's only been 9 hours at 220 and it's 177 in the flat and 175 in the point. I'm hoping for a killer stall soon.
Brought the egg to the in laws.
Black pepper
Sea salt
Paprika
Garlic
Onion
Cayenne

180 is too early to pull the brisket usually 192-195 is the sweet spot I have found.

Burnt ends look great. I had some left from a brisket several days ago so I wrapped them in bacon and am bringing them to our neighborhood game night tonight. Egg is warming up now just hoping adding bacon isn't too much. Congrats on the new little one.
