Rack of pork dinner

Had a rack of pork tonight. Had frenched this one myself and broke out the hammer and cleaver to chop through the backbone. Turned out pretty good. Served with black rice and roasted sweet potatoes which I coated in coconut oil with cumin. I absolutely love the combo of sweet potatoes and coconut oil.
Only pic I got was this one. I had "8 maids a milking" in my head for some reason.

I don't know why I had it on the rack. I pulled it out and rubbed it on there and just left it on there. Kept my hands a bit cleaner I guess.Dunedin, FL

I just bought one of those. Do you have to split them between the rib bones with a hammer and clever? Do you do that before or after the cook. Need specifics.Dave - Austin, TX

I usually buy these at Costco and they remove the back bone. This I got at publix that I had to trim. I cooked it up, sliced between each rib all the way to the bone, then cleved the bone apart. Could probably have just trimmed it off before though.Dunedin, FL
