overnight cooks

Other than brisket and pork butts what else can be done overnight? I'm tired of smoking awesome briskets. .. =))

    Basically the equiv of pork butt. The last full one I bought was 22 lbs. I split it into 3 pieces. Makes great pulled beef. Cooks very similar to pork butt, just takes a bit longer and you take it a bit higher in temp, around 210-215 IT to get it tender.

    It's a giant chuck roast. A whole beef shoulder is called a clod, when you cut it down, you cut it into chuck roasts.

    I've been cooking my ass off. Seems to go quick. I've cooked a bunch of pulled pork. Just looking for something different. Overnight cooks are so easy. Pizzas for us tonight and stew tomorrow. I'm going through lump like Marion Barry through crack. Rockwood coming in next week. I'm down to 200 lbs. Every time I turn around I'm opening a bag of Ozark Oak.

    It shouldn't be more expensive, less work for the meat cutter,no repacking, less waste and no trimming so more fat. It's a primal cut so when your supermarket has chuck on sale go to the cutter and tell them you want the primal for a discount from the sale price. If the meat cutter doesn't have the ability to recognize it as a good deal for them then talk to the manager. I do it when rib roasts are on sale all the time.

    OK you don't seem to be understanding here so I'll type as slow as I can. Supermarkets order primal cuts, the packages you see on the shelf they cut from the primals. The primals come from packing houses in cryovac. You ask for a whole primal. They go in meat locker, get it and hand it to you. No work on their part. No waste. Chuck isn't like an exotic cut.

  • I've seen beef clod at RD just never knew what that huge chunk of meat was or what to do with it.
