Ding, Ding...brisket, round 2
Visited Costco today. Their pork is slightly more expensive but the brisket was double. It's a hour away so for now I'll stick with Sam's. 18 degrees tonight.

I've been wanting to try an au Poivre sauce on a brisket, or maybe pulled beef, much thicker than an au jus, but could work... Pour excess juices out of the pan into a measuring cup, let fat separate and skim off. Deglaze the pan with 1/2 cup of whiskey, either boil or burn off the alcohol, 3 tablespoons of butter, pour in 1 or 2 cups of heavy cream, the remaining stuff in the measuring cup and 2 or 3 tablespoons of fresh cracked black pepper(coarse grind), and boil and whisk till it coats the back of the spoon.
It's suppose to be a steak sauce, and may be too rich to properly compliment brisket, but if you want to try something outside the normal BBQ stuff, it might work. I gonna try it soon myself.

Let it roll all night at 210. I never got up to check it...slept through. Checked at 8 am and the digiq read 200. For some reason the lump burned straight down leaving the perimeter untouched. Pulled the meteorite and stirred the lump. Finished at 207 in the point and 205 in the flat. Ftc. ..haven't tasted it yet but it's tender. 13 lbs smoked 14 hours. Well, this one came out just as well. Great bark and tender... almost too tender. Difficult to slice the point with shredding it. It doesn't bother me because of the taste. A little smoke ring on top. Again out of a 13 lb brisket got around 7 lbs of meat. Sounds like a lot but it'll go quickly. Making stew out of the flat. At 2 victories in a row I'm scared to do another one. This will be dinner.Green egg, dead animal and alcohol. The "Boro".. TN

@Aviator - ya can't throw brisket away!!! As henapple said, you can make stew (or chili) out of the left overs. We usually have a fair bit of the flat left over, so it gets frozen and made in to brisket spaghetti sauce later on when we need a quick dinner.

Looking good man! Did you end up doing anything with the pan juices? I have read that some people simply de-fat the drippings and use as is. I think the easiest way to de-fat is a fat seperator like so:...but if you don't have one I you could just strain them and let the fat rise to the top. If you refrigerate it will harden and you can just scrape off the fat. I may be too late if the drip pan is already in the trash. Au Jus might be good for the leftovers.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
