Smoked Turkey For Thanksgiving

Been traveling all week and the wife just told me that I am in charge of smoking a turkey at my BIL's  as an addition to the standard stuffed variety.  They have a Big Steel Keg which I can work with.  Thoughts on keeping it whole and smoke it or spatchcock it and smoke it. Haven't done a turkey on the egg  yet but am leaning toward keeping it whole.  Any words of wisdom?

  • I've never cooked on a Big Steel Keg but here's a pretty comprehensive guide to smoking a turkey.

I'm very biased towards the Egg obviously and feel that the ceramic is key to holding moisture in no matter what you are cooking.  Hopefully that website gives you some help as to what you are shooting for.
I raise my kids, cook and golf.  When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.
Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

Great link, Thanks Scott.  I think I am leaning toward Spatchcocking now - That way I can cook direct as I do not know what king of set-up a BSK has.  Will probably use apple wood.

Love Egg'd turkey.  Last year, someone put up a recipe for gravy that was amazing.  Highly recommend....
