A big group of us with young kids and no close extended families decided to have a big thanksgiving get together, so my wife and I decided to do our traditional thanksgiving meal today. Been chopping and prepping, Egg cleaned and loaded topped off with fresh lump. Bloody Mary in hand. Should be a fun day.

We did a practice bird a couple weeks back w the same rub but no injection...was so so moist...if I recall I pulled at 160 and didn't rest at all...the skin wasn't as crisp as I would have liked but the bird was pretty awesome.Making the neighbors jealous in Pleasant Hill, Ia one cook at a time... -
From my research, the crisp skin will come from cooking at 425 for one hour, then reducing the temp to 325. Here's where I'm getting my info.Village Idiot said:
