Old School Ribs after 6 1/2 hours

These are the ribs that only has a light sprinkle of salt) pepper. They slow smoked or 6 1/2 hours over Mesquite lump charcoal Almond wood and hickory chips
They are super moist and when I chopped them with my cleaver they fell apart. This proves one thing you do not need to wrap to have falling off the bone ribs

Nice looking cook ya got there. Did some today without foil as well. Mine only went five hours.

Looks great. The ribs I have got the most compliments on have always been only salted and lots of smoke. I am not a foiler either. iMHO, there's a reason you don't see great rib joints foiling their ribs.

Pretty much had to sign a non-disclosure form. The old man that gave me this recipe asked me never to share with anyone and I'm just honoring his request. I'm sure he has passed away because I got this about 30 years ago and he was old that time The cleaver, I purchased in Thailand a few years ago, again from old man, who handmade knives that most of the butchers use working in the Thai markets

Go to Thailand often? Was stationed there 1967-1968. Beautiful place. Food is amazing. Would love to go back for a visit.

While I completely respect your decision to not share the recipe with the general public I hope that at least you will pass it on to your children as awesome as it sounds. Great looking ribs.

I have this recipe written down and when I'm no longer here one of my sons who loves to barbecue will get the recipe..... My son was in one of the jet airplanes today that flew over the San Francisco 49ers stadium during the national anthem. Here is a picture of him sitting in the jet before takeoff
