Venison roast

Hope I can get some advice....I've never cooked one of these. I read about putting the roast in a buttermilk/ lemon juice bath overnight to get rid of the gamey taste... wrapping in bacon to add moisture...smoking to an internal temp of 160.
But that info wasn't from this site... so I thought i would check the egg Trust first.
Any other recommendations?

I've never cooked a venison roast, so my opinions here may not be all too useful. Still, I'd point out that venison is very lean relative to beef or pork. With that in mind, perhaps a brine injection would be in order. You may also want to consider wrapping. Venison usually goes really well with stuff like blueberries, so if you could find some sort of blueberry preserves and use them to form a paste on the outside, then hit it with a seasoning blend that may work well. The buttermilk lemon thing sounds interesting, but I'd actually be concerned about stripping it of the gamey flavor. That's kind of the point of venison. Anyway, those are just my--probably not too worthwhile--thought. Let us know how it goes!Southern California

best advice I can give you is flavor the way you want and do not over cook it medium at most. most people that do not like the flavor the deer or duck it is way over cooked.XL & waiting for my Mini Max Bloomington MN.

I strongly agree with what @justacookin said above. The worst thing you can do to venison is over cook it. It will get very chalky if it's over done. Cooked properly it's beyond delicious.CheersB_BFinally back in the Badger State!
