REAL Texas Fajitas (7 pictures)

Options
Marinated scored flap steak in ancho chile powder, onion, garlic, Mexican oregano, cayenne, cumin, chipotle, cilantro, lemon juice, tequila, and vegetable oil overnight.  Patted dry before putting on the grill so it wouldn't overpower the meat. (chicken for the woman)

Put pecan chips in to give a smokey taste

Caramelized onions and bell pepper with vegetable oil.

Fancy dining tables and silverware are hard to come by out West, so we make do with what we got.

    Looks great! Say would you be so kind as to explain to me how you can enter more than one picture at a time. When I try multiples I post the first and then go back and hit edit to add the next so on, but getting the text placed with the correct picture is a hassle. Am I trying too hard?

    @RRP .  I have my own website and I post the pictures to that.  Then, when composing the post, I hit the icon at the top (2nd or 3rd from the right) and specify the URL (http://......)

BTW, haven't looked at your website in awhile. Love the page on Going "Green". Some really great ideas. You planning on doing solar and rain water harvesting at your new place?

    Thanks, Grif.  I switched from skirt to flap several years ago when skirt prices went through the roof because of the fajita popularity.  To me, flap is similar, a bit more tender (although I tenderize both) and less costly.  Also, Costco always has it in stock.

    PLEASE don't make me turn in my Texan card !

    SOLAR and Rainwater: I won't be doing solar anytime soon.  Pedernales Electric Coop doesn't pay anything for electricity you return to the grid (when you produce more than you're using).  Green Mountain Energy in Houston paid the same as they charge, so it was economically worth it.  I may do rainwater harvesting in the future, but I want to learn the rain pattern here first.

    I don't think I have the authority to take anybody's Texan card away, let alone you. You're more Texan than me, probably.

    That bites on the electricity, but probably a good idea to wait and plan on rain patterns. That's one of the first things I plan on doing when we move.

    Yeah, that didn't turn out very good. I don't recommend it.

    You can get fresh-made tortillas by the dozen at Taco Cabana for $2.50. It's worth it.
