Anyone done Kalua Pig on the egg? I'm going to be providing it for a police/swat training scenario in October. Going to be up to 200 cops. I've done many a pulled pork but this is a little different.

not sure the egg is big enough for a whole pig - not even the XL... for 200 LEO, you are going to need more than one Maybe the XXL*.*not available yet and rumor has it the initial price will be north of $3500.

I don't know about Kahlua pig since the pig won't fit. But check this recipe out "http://www.socaleggfest.com/pork/75-kalua-pork-fluffy-b" I personally haven't tried it but I would do it this way next time. Something about banana leaves and how it adds a different flavor to things.

I'm planning on using pork butts. Those damn pigs just won't fit. I will try to do 5 or 6 on the XL and 3 or 4 on the large. I understand that the only seasoning is sea salt and smoke. The egg will get me plenty of smoke. What do you think.Dave San Jose, CA The Duke of Loney

You can do it with butts. Just make sure you use banana leaves and Kiawe wood for the smoke.

hahahaha Around here there is a large Polynesian culture. The sea salt, and wrap in banana leafs or Ti leaves. Smoke until done pretty simple. Steam up shredded cabbage and mix in once pulled. Can't really go wrong I don't think -
You can also use green tea in the rub if you can't get banana leaves.

We did this as part of our Hawaiian theme for our annual blogger get together this year. My friend, Larry, did the Kalua pork on his Stumps smoker but should work about the same on the Egg. He used banana leaves.
