Spatchcock chicken with racing stripes...

Did a spatchcock chicken yesterday. Haven't gotten my raised grid yet so I started her off with 20 minutes skin side down to crisp it up. Got some neat racing stripes on the bird. This bird was just seasoned with kosher salt, fresh ground pepper and some garlic powder.

We still often use two different rubs on the same bird, half the bird with one rub, the other half with a different rub...... too many rubs to try and not enough chickens, even if they have racing stripes.....Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!
