Doing my first spatchcocked chicken tonight... 6 pounder
Removed the ribs, keel, and wishbone as well... olive oil and rubbed with Black Barts Brisket Rub. Going to go raised direct at around 375-400. Thinking about going with some pecan chips.

I would guess with that big a bird you probably have just enough time for a drink and a stick, not that I have any experience in said process.

I like to mix a handful of pecan/cherry. Nice birdSalado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

The color was nice and the one handful each of cherry and pecan seemed to be the right amount and mix.
Enjoying the Woodford and my stick... Wish the Rays would pitch to Miggy instead of all these walks.

Nice cook on that spatchcock. I've been eggin for five years and did my first about a month ago, might never do whole bird any other way. As far as Woodford goes, been doin that since the first batch came out. I live in the town where it is made and love me some Woodford and an ice cube or two!
