195-205 My last one was 197 and was perfect.

Just poked around, my Maverick said 195 but I broke out the Thermapen and on the flat it was 170. And some other areas deep into it were 170 also.

I feel like I am in the delivery room waiting for my first born, and I don't even have kids.

I thought I might pull it and wrap it in butcher paper and let it rest in my Yeti.

I think I will wait till 205

if you wrap and rest in a yeti, it will hit 205 and get tender. That's what i do when it gets close.

Pecan, and threw in some Hickory. I have a pecan tree and it throws up quite a bit so I use it alot.
