Tacos Tonight

Just put a 3 1/2lb chuck on for tonight's tacos. Rubbed it with Fajita seasoning and salt and pepper. I am cooking at 250 indirect till it hits 160 or so then gonna wrap it with foil May throw on a chicken so we can have both kinda tacos. Time will tell

I use a skirt steak for tacos, cook it very fast and hot and then slice against the grain, thin. I'll have to try a chuck roast sometime, sounds good!_____________

Now the chicken has been rubbed with the same fajita seasoning. I loosened the skin and bout turned this thing inside out. In the little Tupperware jugs my wife has some frozen guacamole and humus that will be part of the tacos

Everything done and ready The beef pulled at 220 and I let the chicken go till 170 in the breast And the plated pics of my beef taco My wiffs mixed taco According to my wiff the beef turned out way much more tender that the "beef stout" that I did a month or so ago. I mam guessing that the total and snug aluminum foil wrap versus the in the pan wrap made the difference. IDK. All I know is I will be doing this again!!
