Three Strips in the Fridge

Options
I have three NY Strips in the fridge at home waiting for some BGE treatment tonight.   In a nutshell, what would you do?

    I would do a nice little reverse sear and sprinkle with your fav seasoning.

    I got TRex. Sear it hot and as close to coals as possible. Pull it to rest while you drink your beverage and wait for egg to come down to 400. Finish to temp of liking.

    I have a CI grid that was made for a MBGE, but fits directly on the firebox of my LBGE (you know right in that seam btwn the box and the ring).  Do you think that is too close?

    Don't think it can be too close as long as it isn't touching the lump and sitting in flames...

    Nope, not too close. I have gone a few inches above lump. Someone will post pics of cooking right on the coals. Some do that!!

    I TRexed them, and added some Blue Cheese crumbles .  It was awesome!  Next time, I will put it down on the CI, right on the firebox.

    ok ok i will do it.  on the coals is fun, my wife likes the pretty grill marks but I do it for the primal side of me every once in a while.  

    fire was super hot, could have let it mature a little longer but it was lunchtime and they lady was hungry.

    here is a better look at a great searing fire, you can also toss a small grid on the coals if your scared of the direct touching
