My first stab at ribs was a home run. I smoked two racks of babyback ribs at 375° for four hours then foiled them for thirty minutes and grilled for about ten minutes to glaze them with the sweet and spicy Thai sauce (Zia Restaurant bottled sauce). They were rediculously good... so much so that a guest that I had who doesn't like ribs ate two of them.
My version of Atomic Buffalo Turds (ABTs) jalapeno peppers stuffed with cheese and wrapped in bacon. Smoked at 325° for 45 minutes.

Just got to ask if your 375 for 4 hour and 40 mins is correct. I am guessing you might want to check your temp gauge. I just cooked a pair of BB's over the weekend turbo @ 350 in 105 total mins. Your ribs do look outstanding.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Doh! That's a typo. It should have read 275° for four hours then foiled for 30 minutes (still at 275°) then bump up the temp to 375° for the direct grilled finishing/glazing.
The ABTs were indeed done at 325° for 45 minutes indirect.

Those look awesome. I want to try this sometime for a change of pace from the regular ole Q-style I always do. Nice job!Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
