How should I cook a whole snapper? I am going to make some kind of flavored butter and put it on the inside but how should I cook it raised direct, indirect, temp? Thanks

    Scale it, remove the gills(the red part from the inside and cook raised indirect.

    I like to scale and not skin red snapper for appearance. If its marginally fresh, remove the skin.
