Red Snapper, Grouper, or Alligator Sausage?

I have a friend that drives down to the gulf once a month and brings back seafood that he sells to the public. I'm thinking of getting either the Red Snapper, Grouper, or Alligator Sausage, and I'm looking for recommendations on which is best to grill.

Red Snapper is my favorite fish - white, delicate, and mild. Grouper is OK, but I've never eaten alligator.Redfish is good too, but we can't buy it in Texas. Here, it's a game fish only (unless farm raised). Blackened Redfish is da bomb (get Paul Prudhomme's Blackened Redfish spice).__________________________________________Dripping Springs, Texas.Just west of Austintatious

They're all good grilled. I'd go for whatever fish looks freshest and nicest, all things equal, grouper then snapper then gator.

I love red snapper grilled on the shell and topped with crab.

Snapper is one of my favorite. Grouper can have a stronger fish flavor. Be daring and get some of each. Gator taste like chicken!?!? ;;)Every day is a bonus day and every meal is a banquet in Winter Springs, Fl !

I live on the gulf coast and fish a lot. I love to grill the red fish on the half shell ( with skin on). marinate it with Italian, mayo, and crushed garlic. before putting it on the grill sprinkle it with a little tony chacheres and grated Parmesan. Bring the egg up tho about 350 and cook it for around 15-18 minutes. there should be a nice crust on top from the meat from the Parmesan cheese. these are actually black drum but i do the red fish the same.

Gator sausage is wonderful! It doesn't taste anything like fish or shellfish though.

If your really getting picky...by order Scamp Grouper, Hog & Yellow Tail Snapper are top of the food chain. Then Black, yellow fin and Gag Grouper etc... American Red Snapper is right there too. Then the rest of the snappers Mangrove, Lane etc...Red Grouper is the bottom of the Grouper Species. I saw an interesting article that there is a device coming that will allow to test if the grouper is really grouper http://www.tampabay.com/news/new-handheld-device-can-fish-out-fake-grouper/1264792 . Anyway, they are all good fish. Secret to fish is freshness. Best way is to look at the eyes. Had Gator many times...but don't think its that good. More of a novelty. some of the fellas really like it. To me if I am going to eat swamp critters I really like frog legs and turtle soup (nawlins style). Anyway its all good coming off the BGE.

Interesting they have the grouper problem. Down here, unscrupulous restaurants (or their suppliers) frequently swap tilapia for snapper. +1 on freshness. Also, smell the fish - it shouldn't smell fishy or like ammonia at all (unless it's shark).
