Car Wash Mike Rib recipe

The recipe calls for 200-225 degrees during the first 3 hours of smoking. Sorry, the same 'ol question .....is that grate or dome temp? Seems too low if using dome temp. But I thought I better ask.

    I do all my slow and low's at 250 dome.

  • As I remember Mike did his ribs really low for the first few hours to maximise the smoke. Then raised to 250 for a couple more.

    I use 225 -250 dome for the first 3 hours.

    I use 225 at the rack for the first 3 hours and they have always turned out good for me.

    In the great majority of cases, unless specified otherwise, if a temperature is listed, it is dome-as that is the one indication all BGE's have.  FWIW-

    There are 2 or more versions of this recipe out there. The one I keep on file says to use 225* dome temp. for the first 3 hours.......then, bump up to 250*.
