Does anyone have experience or knowledge of cooking a small veal shoulder roast on the BGE?

Yes.
If it is red veal (grass fed) it is going to be a bit tough. If it is provimi (white veal, milk fed) it will be more tender. Red veal you would be best to low and slow it. Provimi you could roast 325-350 range but I would do either at 250 ish and do an end sear on the white. It is a chuck roast.
