you can indeed. Just like a chicken. 'cept way bigger. Cook raised direct to 160 breast/180 thigh. 350 F plus or minus 50F.

A little tougher to get the backbone out. A set of poultry sheers would be good. I did my first one last year using the trader joes bird and I thought it turned out really good. I used the plate setter but I'm sure just like chicken it would work great indirect or raised direct. I just used some herb butter on and under the skin and it came out with a nice color and really juicy.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

Did one last week, indirect, IT in the breast 160. Turned out great.

Mad Max Turkey! Although I did a Spatchcock turkey a month ago and it was phenomenal! Just be sure to get the temp probe buried nice and deep so you can make sure it's done. Thanks, Mike "Live in such a way that if anyone should speak badly of you, no one will believe it."

How big of a turkey will fit on the large egg in spatchcock position?

Have butcher spatchcock for you. Cutting out the backbone is a PIA compared to spatch'ing a chicken.Large, small and mini now Egging in Rowlett Tx
