I have typically done my cooking on butts at 225 which works out to roughly 2 hours a pound.  I have two 8 pound butts to get ready tomorrow afternoon and I am trying not to stay up all night.  I have heard that if you take the dome temp to 275 it works out to 45 minutes a pound - is that right?  Also, does it affect the cooking time if you have two 8 pound butts on the egg at the same time or does that matter?  (I would assume not but not sure...).  Thanks!!

It shouldn't take longer with two butts.  I'd think you'd be closer to an hour a pound at 275 dome, but it can vary by 25% either way.
