What's target temp for Boston butt. 6lbs?

I cook mine at 275 dome until 200 internal.

Yup. 200 internal, maybe even 205.

+1, and take the temp in a couple of places, the "money muscle" needs a fork twist test. It is usually good if the internal is 200-205.

All a matter of opinion, but 200 or more for me is too mushy, I pull at 195 at most for firmer meat.

I start checking the resistance to the probe at 195 and continue to check at 2 degree intervals. As soon as the probe goes in like pushing into butter, I pull the butt. When doing multiple butts, I check each butt because some will be done at a lower temperature than others

For pulled pork I'm fine with the 195-205 range. Sometimes I go with sliced pork for a change & pull that around 180-185.
