Yup. 200 internal, maybe even 205.

All a matter of opinion, but 200 or more for me is too mushy, I pull at 195 at most for firmer meat.Packerland, Wisconsin

I start checking the resistance to the probe at 195 and continue to check at 2 degree intervals. As soon as the probe goes in like pushing into butter, I pull the butt. When doing multiple butts, I check each butt because some will be done at a lower temperature than others

For pulled pork I'm fine with the 195-205 range.
