need a different flavour for a butt
4 heaping tbsp paprika, we used 3 tbsp of spicy paprika
2 heaping tbsp garlic powder
2 heaping tbsp onion powder
2 heaping tbsp ground pepper
2 heaping tbsp fine salt
2 heaping tbsp ground cumin
2 heaping tbsp dried oregano
rubbed mustard on the butt and then put the rub all over the butt and put in the fridge.

IWe've made some great "miso" marinades for cod, chicken and tenderloins. I don't see why it wouldn't work as an injection. The marinade would not penetrate deep enough even on a 3 lb butt. But they are basically miso paste, miren, rice wine vinegar. I would then work some 5 spice powder with some brown sugar into a rub.
My other thought off the top of my head would be to brine it using some B grade or Dark Amber A grade Maple syrup in lieu of sugar. then of course water and salt. You could work maple sugar and a little extra cayanne into your rub for a sweet heat. Then mabye save some of the maple syrup to use in a finishing glaze.
Depends on how sweet you want to go.

I like Butt Rub with a little extra brown sugar
Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd. -
I really like John Henry's Raspberry Chipotle rub. It's got a sweet taste, offset by a mild kick from the chipotle.
See if your local BBQ store has any that you can sample & see how you like it.

Don't get set into one form, adapt it and build your own, and let it grow, be like water. Empty your mind, be formless, shapeless — like water. Now you put water in a cup, it becomes the cup... Now water can flow or it can crash. Be water, my friend. - Bruce Lee -
I cut some apples and cooked them down and added cinnamon and BBQ sauce and that came out really good.

Sounds pretty good, John Henery's makes a pecan rub that is very good on butts also. I mix it with Butt Rub.Hillbilly-Hightech said:I really like John Henry's Raspberry Chipotle rub. It's got a sweet taste, offset by a mild kick from the chipotle.
