10 lb brisket cooking time

I got a 10 lb packer from costco I will be putting on my xl this weekend for a feed at about 4 pm sunday. was thinking about putting it on at 10 pm sat night will that cooking at 225 to 250 . Thinking I wil need 15 - 18 hours. I am correct?

did mine at 265 grid as suggested by Cen-Tex figure 1.5 to 2 hours a pound . mine turned out great . start checking for tenderness about 180 or so your meat probe or fork should slide in like butter mine cooked to 200/205 internal . good luck and enjoy the cookLarge Big Green Egg , XL Big Green Egg . Thanks for the info. Based on this I am planning on putting on at 5 pm Saturday night for a 4 pm dinner on sunday with a few hours of FTC. Do folks think this is a good plan?

Just did a ten pounder, trimmed to eight maybe eight and a half pounds, ten hours. It was perfect. Cen-Tex is soooo right.

I cook them between 235-250 and I would bet a 8-10 pounder would take no more than 11-13 hours.Packerland, Wisconsin
