Brisket and Maverick Probe Wires?

I am going to do my first brisket tomorrow on my XL.  I thought that I would use the Maverick 732.  Where should I put the probe in the 10 pound brisket - thick part of the flat?  Also, do I need to wrap the probe wires with foil where they will be pinched between the lid and base?  Thanks for your advice!

I wrap my wires for sanitary reasons. I just peel and discard the foil after the cook and wipe down the probe with alcohol several times. done!

Put the probe wherever it is easiest. You should only use the maverick to know when you are close. Once the meat reaches about 180, I would start poking with a fork to test for tenderness. That is the true test for a done brisket.

    I never wrap my wires.
Be careful, man! I've got a beverage here.
