Got the recipe here:
http://andreasrecipes.com/2010/01/04/slow-cooked-achiote-marinated-pork-cochinita-pibil/
This is one of those meals that looks like it would be difficult to make, but really is very, very simple.
I'd never tried it before.....it's fantastic.

Nice work. I suck @ following recipes and making meals but really need to expand the horizons. Always go with what I know or what might look doable off food network.Seattle, WA

Btw love that blendtec, we have the additional twister jar which is great.
Did u make the rice and beans from scratch? I'm a sucker for spanish rice, mines tomato sauce, cumino, garlic , and a little chicken base. Still trying to perfect it like grandma though.Seattle, WA -
Thanks.
I LOVE my blendtec. Yes, we have the additional jar also.
Na...rice and beans from a box and a can. [-X

Next time go for a complete Shoulder no pieces and add a rack of baby back coat the whole thing with the achiote mix and add a little extra. When all said and done, just remove the bones and pull the meat. Here is mine:Men, easier fed than understood!!

Wow!! Looks awesome!
Also, @FlyingTivo Love the idea of the complete shoulder and rack of ribs. Any more pics?Just a hack that makes some $hitty BBQ.... -
I prefer pieces. More surface area for coating.
Thanks for the advice though.

Here is my thread with pictures a while back!Tortaboy, when serving it the way you do its nice as a meal.I like having it pulled, that way you can use it on anything like tacos, Pizza, quesadillas, sandwiches, etc... I like doing big batches and saving it for weekdays and lunch at school for the kids!FelipeMen, easier fed than understood!!

I'm doing one old school style starting today. Dug the pit in front of the beach house in a drunk haze yesterday. Lining with bricks and building a bonfire today to season the pit. Burying the pig tomorrow am. Eating cochinta tomorrow night for dinner.
Pics willFollow. Stay tuned.Keepin' It Weird in The ATX FBTX -

Just got back from home depot with all the bricks and the corrugated steel to finish the pit. Also stopped by the Mexican grocery store for the Achiote and sour orange juice. It is on.Keepin' It Weird in The ATX FBTX

I have not seen sober in 4 days. I have 4 separate visable injuries and a very sketchy fire burning in a public place. All is well.lakewade said:
