Here is what's going on after our steaks.... Slathered with a blend of olive oil and peach schnapps then applied some dizzy dust, swamp venom, and some turbinado sugar. No worries with pork butts. I always get those perfect regardless of how long or what temp. I followed Lizzie's lead of the logic that TWO butts are better than one.

I dont care for fillets either. I have a couple chuck eyes I'm cooking for me. The fillets are for everyone else. My wife tosses fullets in the buggy because age thinks that is good steak. Trust me when I tell you the chuck eyes are way better then the fillets and are a fraction of the costs....
