Chicken wings and first low and slow Boston Butt

So I did chicken wings tonight and they turned out great! I rubbed them with weber kickn chikn spice and cooked them for 1.5 hours at 350. Then we added more lump, apple wood chunks, and the plate setter and now have my 8# Boston Butt on. I fought with the temp for a bit but now it's holding like a champ at 223 on the Maverick. The dome says 260 but I gues they could be that far off? I'm tired so going to bed but I got the alarm set. I hope it's good and I will post pics.

The delta T you see between dome and grid is normal for indirect cooks. The longer the dome is shut the closer the temps converge.
